UNCLE CHUCK'S MANHATTEN STYLE CLAM CHOWDER
INGREDIENTS:
3 large Yukon Gold potatoes
4-5 strips of bacon
4 ribs of celery with leaves
1 large onion your choice of onions
1.5 C of French cut carrots
1 T minced garlic, or more if you are a garlic lover.
2 Bay leaves
1 3lbs can of clams. (Costco)
1.5 quarts of high quality tomato sauce
PREP
In a large pot, cook the bacon until crisp. remove from pot and drain bacon fat.
Then add celery, onion, carrots, and garlic to the drippings and saute until the onion is transparent, or about 8-10 minutes.
Add chopped potatoes and stir.
Add 2.5 quarts of water
1 T Clam base
2 bay leaves
2 T of high quality Italian Herb Blend
1 t red pepper flakes (optional)
Cover and simmer until potatoes are barely tender, or about 10-15 minutes
Add the following.
1.5 quarts of high quality tomato sauce
3 C of diced tomatoes and their juice. (2 15oz cans.
chop bacon fine and add to pot.
Add 1 3lbs can of clam juice
Stir well and cook over medium heat for about 15-20 minutes.
About 5-7 minutes into cooking, add the 3 lbs of clams and stir.
Test the broth for salt and pepper additions, and add as desired.
