CHICKEN MUSHROOM MASHED POTATO SOUP
This is a quick and easy dish to make.
INGREDIENTS:
Organic potatoes
2 sprigs of salad onions, chopped
4 Regular button mushrooms, sliced.
Onions optional
Baked chicken thighs and breasts from a deli, or cook your own.
Debone the chicken, and boil the bones.
Boil the potatoes while frying the mushrooms and salad onion in butter.
I always make much more mashed potatoes than I need.
In the morning I fry them and top them with an egg.
Remove all chicken solids and place the broth in a frying pan.
Cook at a medium heat.
Take a 6-8 ounce jar with a lid. Put an inch or two niches of regular flour in the jar.
My grandmother taught me how to make gravy way back in the 60’s.
She insisted that she only adds ice cold water to the flour in the jar.
Cap it and shake thoroughly.
Using a fork, slowly pour in the flour-water mixture, always mixing vigorously with a fork.
When the gravy sets up, add salt, pepper, garlic powder and the fried mushrooms, onions and chicken.
Mash the potatoes with about an ounce of butter or oleo.
Do not add milk.
And, do not over boil the potatoes to mush. If they get too mushy, they aren’t the best.
To serve, divide up the mashed potatoes into medium size glass bowls.
Then add the gravy mix over the potatoes.
Hence Chicken, Mushroom, Mashed Potatoes, Soup.
Enjoy.
If you don’t take anything else out of this recipe, ALWAYS follow the gravy instructions to the T.
